Because plans always change, I'm usually hesitant to release the latest news, even if it's not revealing in any sort of way. As far as I know the Best Of is being planned for a US release with a different track from the UK/rest of the world version.
There are several options with the new track. The first, release a brand new original song. This is looking less and less likely. The second, a new covers track born from the covers album recording sessions. This is not set in stone, so take with a grain of salt.
As for a double album, I don't know. Island DefJam and UK Island seem to be two different engines running in two different directions. It's possible, although history indicates it probably won't happen for North America. Think of it this way, when was the last time Def Leppard released a double album in the US?
On a related note, a tour to support the best of is looking more likely. Whether the tour is to support the Best Of or a potential covers album is still unclear, but the two seem to be part of a plan for 2005.

The key to all of this is the potential release of a covers album. The thinking, or at least I hope this is the reason by the label, is to possibly put out a new covers tune on the US version, (sans waterloo sunset) so it drums up interest for the covers album down the road. But as mentioned previously, plans can change at a moments notice. For all we know, LLWTG might still be released based on the ongoing mood of the label!
The good news - through my perspective that is - that they're mentioning a tour for 2005. Believe me, if it wasn't halfway true they wouldn't be talking about it.

So, basically, if they don't put out the cover album, we're going to get ANOTHER tour of "The Greatest Hits" setlist. LOVELY (Very sarcastic) I hope the Cover Album comes out!
